Melanin, the brown pigment molecule that colors skin, hair, and eyes, hasn't been fully deposited in the irises of their eyes or darkened by exposure to ultraviolet light. The iris is the colored part of the eye that controls the amount of light that is allowed to enter.
The color of a kitten's eyes changes from the blue-gray color to the adult color usually by 7 weeks of age. The color usually changes to gold, green, or copper. The exception is Siamese kittens or kittens that are mixed with Siamese. Their eyes are blue as kittens and stay blue. http://chemistry.about.com
